Breakfast Plate

I've been doing a lot more meal prep these days.  I set aside a few hours on the weekend to cook some basic items that can be stored in the fridge for use throughout the week. The idea is to cut time spent planning, shopping and then cooking up meals. In doing so, I've developed some pretty tasty recipes that can be thrown together in under 15 minutes. I'll start by sharing this delicious salmon breakie plate that is also a favorite for lunch.

Salmon Breakfast Plate


1 cup quinoa
2 soft boiled eggs
1/2 roasted zucchini
10 green beans
2 sliced radishes
1/4 cup cucumber
drizzled cilantro lime sauce

Previously Prepped:

Roasted Veggies
Smoked Salmon (bought, not smoked by me)
Cilantro Lime Jalapeño Sauce


Heat up quinoa and roasted veggies. 
Place a the base of quinoa on a plate. Add roasted veggies, salmon, raw veggies and top with sauce.
It's that simple!
