Cucumbers are typically thought to be a vegetable but are actually a fruit. Most people believe they have little value, other than to rid puffiness around the eyes, but this is far from the truth. Studies have shown them to be rich in many micronutrients. Vitamins K and C are abundant in cucumbers which can aid in the building of strong bones while antioxidants and polyphenols help to fight off free radicals and aid in a graceful aging process. Studies have also shown they contain several minerals, like magnesium and potassium, known to improve digestion as well as supply the body with electrolytes as to help retain a healthy level of hydration (1)

Learning this wealth of information has me enjoying cucumbers in a whole new way. Hence this fresh salad recipe for you to enjoy through the end of summer while cucumbers and radishes are still in season. 

Ingredients:

2 large cucumbers
3 large carrots
6 radishes

Cilantro, Lime Jalapeño Sauce

6 ounces grass-fed greek yogurt
1 lime
1/4 cup cilantro
1/4 - 1 jalapeño
salt to taste

Instructions:

Slice cucumbers, carrots, and radishes and set aside.
In a Ninja or food processor, add yogurt, lime, cilantro, jalapeño, and salt. Blend until smooth and tweak the ingredients until it's to your liking.
In a medium bowl, mix the cucumber, carrots, and radishes with the sauce and serve cold.
